Baked Mussels with garlic & herb breadcrumbs

2 1/2 kg mussels , cleaned .

50g butter, frozen and grated.

50g fresh breadcrumbs.

1 garlic clove , crushed.

small bunch parsley ,roughly chopped.

2 lemon , cut into 4 wedges, to serve.

Crusty bread or bread rolls, warmed, to serve.

Cooking Directions for easy mussels with garlic herb butter recipes,

First pour all the mussels into a large pan fill to well cover the mussels with water and stir vigorously and leave for 5 minutes then take out and discard any that float, stir again and wait a further 5 minutes again take out and throw away any that float.

Make sure all the mussels are alive before you cook them, if any of them are open, tap them on the sink or work surface, if they don't close, throw them away.

Scoop out of the pan all the mussels and put into another large pan and place on the lid,then cook them for about 4 minutes on a high heat to steam or until they open.

Take out and throw away any that won't open,then remove the top shell from each mussel and discard.then.

Put all the mussels shells on to a baking tray.

Spoon on each mussel shell a little of the butter mix then spoon sprinkle breadcrumbs over each shell.

Then flash cook under a preheated very hot grill until just golden.

Squeeze a little lemon juice over each and serve with fresh crusty bread rolls.

A glass of light dry white wine like Pinot Grigio would go very nicely with this simple meal.
