Beef Ribs Roast

Beef Ribs Roast.

1 Sheath of Rib for Roast (about 4 lbs.)

2 cloves of garlic peeled.

3 leaks chopped thick.

6 carrots each cut 4 long pieces.

1/2tsp a little salt.

1 tsp black pepper.

Process the garlic with the salt in the food processor until it forms a paste.

Add 3 tbsp olive oil and process 30 seconds more.

Spread the garlic mixture evenly over the roast.

Directions for this Beef recipe of Ribs Roast.

Preheat oven to 450 degrees F.

Place roast on a rack into a oven roasting pan.

Add 2 C. red wine to the bottom of the pan or a good beef stock.

Roast the first side for 20 minutes at 450°F.

Turn over the ribs turn oven down to 350°F,roast for a further 20 minutes per pound.

Check and stir the wine liquid increase if needed with wine or beef stock.

For for medium to rare reduce 16 minutes per pound.

Check using a sharp knife to slice into the meat if it requires further cooking increase as needed.

Let stand 15 minutes before carving. Serve with pan juices.
