Chicken Breasts Mozzarella stuffed with Broccoli and Parmesan

This is yet another variation of the chicken Breasts Kiev recipe. This easy recipe makes for a wonderful weekend dish when you want to prepare a nice simple but different an almost special occasion type evening dinner.

Perhaps with a nice bottle of white wine not to expensive but not a cheap one,certainly not sweet as you need a wine that will help to balance all the cheese flavours.

A Chablis would be ideal or one with a similar style and there are some great wines coming from S America that can compete with some of the best now.

Ingredients for Chicken Breasts Mozzarella

4 chicken breasts cut into each to form a wallet into which you will put the cheese and broccoli.

1 egg.

1 large bunch of Broccoli cut off the heads and into ½” florets pieces.

1/2 cup of full cream milk.

1 cup of fresh oven dried bread crumb.

Salt and fresh ground black pepper.

2 to 3 tablespoons olive oil.

8 slices mozzarella cheese, or more.

1 jar or can 400g spaghetti sauce.

1 tub of grated Parmesan cheese.

Directions for this Chicken Breasts Meal

Place the Broccoli florets into a pan of boiling water for 2 minutes take off the heat, then sieve away the water leaving the broccoli crunchy and in the pan.

Add the egg and milk to a bowl and whisk together.

Dip the chicken breasts into milk and egg mixture and then coat all the chicken breasts with the bread crumbs.

Heat olive oil in a large frying pan over medium to high heat.

Fry the chicken to brown a little on both sides until almost a golden colour, about 3 minutes on each side.

Set chicken on to kitchen foil on a baking dish.

Slice the mozzarella cheese in half with one half, slice into 4 equal slices and insert one piece into each wallet of each chicken breast.

Spoon the broccoli from the pan and into each of the chicken breasts the press firm to close the breast.

With the other half chop into small pieces about1/4” thick then divide into 4 portions. .

Carefully place each chicken breast on kitchen foil on a baking dish,and sprinkle a portion of Mozzarella on the top of each chicken breast.

The spoon on the top the amount of the grated Parmesan you require.

Place into a preheated oven at 350 degrees for about 25 minutes or until the cheese is golden brown.

Heat up the spaghetti sauce and prepare the spaghetti as per the pack instructions.

Chicken Breasts Mozzarella

Sprinkle with Parmesan cheese and a little more mozzarella and bake at 350° for about 25 to 30 minutes, or until bubbly.

Take out the chicken breasts carefully and place in the centre of a warm plates.

Serve spaghetti around the chicken breast and pour over the spaghetti the sauce.

Garlic bread and separate green leave and herb salad to accompany the enjoyable meal.
