Chicken Pasta Dumplings with Tomato Sauce

This Chicken Pasta Dumplings with Tomato Sauce recipe is specially prepared with Cheesy Dumplings to be part of this chicken pasta dish.

To make cheesy dumplings, place flour in a medium bowl.

Rub in butter until it resembles breadcrumbs.

Stir in cheddar and chives. Add milk and use a knife to mix with a cutting motion until mixture comes together.

Use your hands to bring dough together and place on a clean surface. Divide evenly into 8 portions and roll each portion into a ball.

1 cup plain flour.

1 tsp baking powder.

½ cup of shredded strong flavored cheese,mature cheddar is good.

1 small onion chopped fine.

1 tsp of mixed dried herbs.

1/3 tsp salt.

2 tbsp vegetable shortening (such as TREX or White Flora).

1/2 cup skimmed milk.

Ready to make your cheese dumplings, place flour in a medium size bowl.

Rub in your vegetable shortening(vegetable fat) until it resembles breadcrumbs.

Stir in cheddar, herbs and onion.

Spoon in the milk and use a knife to mix using a cutting motion until mixture comes together.

Then use your hands to bring dough together and place on a clean surface.

Divide evenly into 10 portions and roll each portion into a ball.

Fry these in a pan with just enough olive oil to cove the base of the pan until they turn a pale but golden brown (do not overcook them).

Carefully take out your dumplings and set aside to wait until the chicken has been cooking for 15minutes.

Then place your dumplings gently into the chicken and tomato dish and cook them all together for a further 15 minutes.

This extra cooking will let the dumplings absorb the flavours of the chicken and tomato while still retaining that crunchy par fried texture when served all together with the pasta.

4 chicken breasts.

2 x400 grams cans chopped plum tomatoes.

1 pound linguine (or any other) pasta.

4 tbsp olive oil.

2 tbsp dried or fresh basil.

4 garlic cloves peeled and crushed.

3 tbsp sugar.

2 level tablespoons oregano.

1 cup grated Italian hard cheese (Parmesan type).

1 tbsp fresh ground black pepper.

A pinch salt to taste.

Directions for Chicken Pasta Dumplings with Tomato Sauce

Chop up the chicken breasts into chunks.

Add 2 tablespoons of olive oil to the frying pan and bring to a medium heat.

Fry the chicken till it is slightly brown.

Turning gently as the chicken pieces cook it should take 10 to 15 minutes.

Sprinkle a small amount of the the pepper, basil, oregano, garlic and salt over the chicken.

Cook for a further 3 to 4 minutes then stand the pan aside.

Add 2 tablespoons of olive oil into another pan and heat for a minute at a medium temperature.

Add the remaining crushed garlic and fry gently for 3 minutes.

Add the tomatoes, sugar, remaining basil, oregano, pepper and some salt and simmer for 30 minutes.

Add the chicken and all juices remaining in the frying pan and cook for a further 30 minutes.

As the chicken is cooking boil some water in a pan and cook the pasta according to the pack instructions,strain off or sieve off all the water from the pasta.

Serve the chicken pasta on warm plates with the chicken and sauce poured over it.

Top it off with grated strong or Italian cheese.
