If you require to add a carb content add some wholemeal/granary bread. Virgin olive should not be used as this can be unstable when overheated).

Ingredients for diabetic breakfast ideas.

Tuna Omelet Breakfast for one.

2 whole eggs.

180g tin tuna, drained break up with a fork. (use half 90g)

Tuna Mixed Peppers Omelet

2 tsp normal olive oil.(Not virgin olive oil)

1 green pepper (use half)chopped fine.

1 red pepper.(use half). chopped fine.

A pinch of salt.

A pinch or two fresh ground pepper,

Salad

15g fresh herb or rocket leaves.

20 grams shallots chopped fine.

40g vine rip cherry tomatoes, just halved.

Balsamic dressing preferred but(optional) any salad dressing is fine.

Tuna Omelet

  • Crack eggs into a bowl and mix lightly with fork.

  • Mix together.

  • On a medium, heat a small non-stick frying pan.

  • Add the oil to the pan.

  • Season eggs with salt and pepper.

  • Pour in the egg mix into the center of the pan,moving the pan as the mixture spreads.
  1. Heat up on med heat a small non-stick frying pan with 1tsp of olive oil.
  2. Add the chopped peppers and gently cook until just soft(1 to 2minutes),then take out and put aside.
  3. Crack eggs into a bowl and mix lightly with fork.
  4. Season eggs with salt and pepper.
  5. Put the last tsp of olive oil into the hot frying pan.
  6. Add mixed eggs into pan stirring very gently with fork until eggs just begin to set.
  7. Mix the tuna and peppers together first.
  8. Add this mixture to center one third of the pan.
  9. Fold over the center of the peppers and tuna mix ,the semi cooked remaining egg mix.
  10. Once they have sealed together gently take a plate face down and cover the semi formed omelet.
  11. Turn the frying upside down while holding the plate that will contain the almost cooked omelet.
  12. Return the pan to the heat then gently slide the omelet back into the pan to cook the other side for the final cooking finish.
  13. When omelet is cooked to your required taste turn out onto serving plate.
  14. Garnish the golden brown omelet with the salad ready to eat and enjoy.
