Oven Roast Beef Recipes

1-1/2 kg beef fillet.
60 g parsley, chopped fine.
60 g chives, chopped fine.
1/2 ts Mixed herbs.
1/2 tsp salt.
1 tsp freshly ground black pepper.
1/2tsp grain mustard.
200 ml beef stock.
60 ml red wine vinegar.
6 tbsp butter, to baste the meat.
2 tbsp butter, for the sauce.
4 eggs, yolks only.
Preheat your oven to 180°C.
Direction to prepare the beef:
When preparing the beef, place the fillet in a roasting dish, layer some of the butter over the beef and place in the hot oven.
Roast the beef for 40 minutes, basting with the butter every five minutes, when this has been completed set the beef aside to rest in a warm place.
Directions for making the sauce:
Place all the remaining ingredients, except the egg yolks, in a saucepan and bring to a quick boil.
Then leave to simmer over low heat for 15 minutes.
Remove about 60ml of the sauce and in a separate bowl mix together the sauce and the egg yolks, beating continuously until well blended.
Return the egg mixture to the saucepan and cook, stirring in the mustard continuously until the sauce begins to thicken.
Now stir in the meat juices into the sauce and cook for a few further minutes.
Take the sauce off the heat, slice the beef into thick slices and arrange these on a plate.
Spoon the sauce over the meat and serve immediately.
