BBQ Pepper Steaks

My BBQ Greats

A selection of the best mouth-watering barbecue beef recipes.

Peppered Steaks with Garlic.

4 x beef, sirloin, rump, or fillet steaks about 6/8oz each.

2 garlic cloves, crushed.

2tbsp brown sugar (optional.

1 cup of Stout type beer.

2 tbsp Worcestershire sauce.

1 tbsp virgin olive.

1 tbsp crushed black peppercorns.

Directions

Put the steaks in a bowl and mix in the garlic, Beer, sugar,

Add in the Worcestershire sauce and oil.

Turn to and coat both sides and then leave to marinate turning them occasionally in the fridge for 2-3 hours or overnight if you can.

Remove the steaks on a plate cover and put on one side ready to cook, and then keep the marinade aside.

Sprinkle the cracked peppercorns onto your steaks and press them into the surface.

Cook the steaks on a very hot barbecue for 30 seconds each side to seal in the juices brushing on the marinade liberally.

Turn down the heat from very hot to hot after this sealing process.

Brush on or spoon carefully just a small amount at a time to avoid the flaring up of the barbecue flames or the smoke from the flames could ruin the flavors of the steak.

Always have a cup of water available to put out those flames.

Turn the steaks during cooking, and cook them for about for about 2 minutes on each turn and then test by cutting into one to determine how rare you like them.

A nice Salad and a jacket potato (perhaps a little cheese to melt in the potato) is an ideal accompaniment for this outdoor meal.
