Swiss Countryside Potato Pancake
This traditional Swiss Countryside rosti recipe has many variations depending on every locality,it is a very filling meal even for those with a large appetite
It is a very localised dish using often leftovers from the previous day and whatever is available.
Winter times in some so of the hard to reach villages they could only use what they had available.
Now with tourism the dish is very popular and most mountain restaurants have their own special version.
3 lbs potatoes.
1 egg, beaten.
6 tablespoons butter.
2 tablespoons sunflower oil.
8 ounces Swiss cheese, grated.
Salt and ground black pepper to taste.
1 tablespoon finely chopped parsley.
Bring a large pot of salted water to a boil.
Add potatoes and cook until tender but still firm, about 15 minutes. Drain, and let cool.
Once cool, peel and grate potatoes. Mix in beaten egg, salt and pepper and herbs.

Add a layer of potatoes and flatten it into a layer in the pan.
Top with a layer of cheese and repeat.
Sauté at low to medium heat until bottom layer becomes brown and crispy, and turn onto a plate.
Melt the remaining butter and return rosti to frying pan.
Sauté until the second side is crispy.
