Salmon Patties

Salmon patties recipes Ingredients

1 can (16 ounces) salmon.

2 small onion, finely grated.

2 tablespoons chopped fine fresh parsley.

Generous twist of fresh ground black pepper, to taste.

Just a little sea salt.

2 large eggs, well beaten.

Directions for Salmon Pattie recipe.

1 to 1 lagrge cup fine dried bread crumbs.( toast 4to6 slices of white bread to dry but not brown then roll these to make you your fine breadcrumbs.

3 tablespoons butter.

1 doz fresh basel leaves.

Preparations

Pour all the salmon contents from the can into a mixing bowl.

Brake up the salmon with a fork, removing any bones or squash them up if you prefer (they are edible).

Mix in grated onion, with the sea salt, pepper and parsely.

Mix beaten eggs with the salmon, add just enough bread crumbs to make bind together, then divide and roll them 10 or 12 small ball shape patties.

Roll the patties in 1/2 cup bread crumbs to coat the outer surfaces.

Then melt the 2 tablespoons of butter into a large preheated large heavy frying pan over low heat.

Add patties to the pan carefully and fry the patties slowly lifting them to check once they start to go a golden brown turn each over to cook the other side, you can turn them again just to make sure they cook to a deep golden brown.

They can be served on a nice crispy green salad of small new potatoes boiled with some fresh mint leaves for a very tasty and healthy meal.

Serves 4/6 persons.
