Sweet Potato Soup Recipe

Sweet potatoes create this great colourfully delicious fibrous flavour, to produce this extremely satisfying soup - with an extra kick.

Ingredients for this sweet potato soup

. 1.5 litres vegetable stock fresh, cubes.

• 750g sweet potatoes , peeled and cut into chunks.

• 125 tub of plain natural yoghurt.

• • 2 tbs butter.

• 3 small red onions peeled and chopped rough.

• 1 red chilli, very finely chopped or just a pinch of chilli flakes.

• 1 tsp. ground coriander.

• 3 garlic cloves crushed.

• 2 tsp. of fresh ground black pepper.

• ½ tsp. of sea salt.

• 100g Gruyere cheese, grated.

• A tiny pinch paprika if you want that extra kick, optional.

• • Melt a knob of butter in a large pan, add the onions, chilli, coriander and garlic stir and and cook for about 8-10 minutes until just soft.

• Add the sweet potato and cook for-3-4 minutes.

• Add the stock, first bring to the boil then simmer for about 10 minutes until all the sweet potato is soft.

• Gently mix in the natural yoghurt.

• Blend if you want a smooth soup, or mash if your prefer more rough, chewy texture.

• Season more if required and serve with a sprinkling of parmesan cheese over the soup.

• Fresh crusty garlic bread is a great extra.
