Baked Trout Wrapped in Smoky Beacon,Herbs and Almonds

This easy trout meal is ful of flavours and natural healthy fish oils.

A Simple Baked Trout Meal..

Most of us have experienced the pleasure of walking by the side of a small river with the sunlight glinting through the trees then reflecting from the exited rushing waters and seen a trout rise to catch a fly.

This easy and simple meal can be accompanied with new potatoes with a simple cheese sauce or just any green salad,with perhaps a mixed balsamic dressing over the salad it is a healthy for all to enjoy.


INGEDIENTS for Baked Trout

  • 1 lemon
  • 2 medium size trout , rainbow or brown, cleaned
  • 1 large bunch thyme
  • 1 garlic clove , chopped fine
  • 4 slices pancetta , or rashers of smoked streaky bacon

4 tbsp olive oil

  • 100g fine green beans
  • 2 tbsp toasted flaked almonds

Cooking Method for Baked Trout

1. Heat oven 220C/fan 200C/gas 7.

Cut half the lemon into 4 thin slices and juice the other half.

Score each fish 3 times on one side. Place the fish on a baking tray, scored side up, and season liberally inside and out with salt and pepper.

Stuff each fish cavity with thyme, a sprinkling of garlic and a lemon slice.

Lay the rest of the thyme on top of the fish and top with a lemon slice.

Wrap the smoked beacon around, holding the lemon and thyme in place.

Cote with 1 tbsp of olive oil and bake for 20 mins until the is crispy and golden the fish is cooked.

2. While the fish is baking, boil the green beans in a pan of salted water for 4-5 mins until crispy and just cooked.

Drain the beans and toss them with the lemon juice, olive oil and almonds.

Serve the fish with the beans on the side of the plates.
