Breakfast Casserole

This is really a night before recipes, you prepare it the night before, cook it in the oven for around 30minutes and you have ready a Breakfast that could keep you going all day if you want.

Ingredients for this hot Breakfast meal Casserole

1 and 1/2 lbs best pork sausage. ^ small tomatoes cut in quarters

6 eggs.

2 cups milk.

1/2 tspn sea salt.

1/4 tspn Black pepper.

1 tspn seeded mustard mustard.

6 slices white bread or wholemeal, cut into 1 inch cubes.

2 cups shredded Mature Cheddar cheese.


Into a large frying pan first cook just too brown, then slice sausage in 1/8inch slices,then set on one side.

In a large bowl, beat eggs; add milk, salt and mustard.

Stir in bread cubes, and 1 cup of the grated cheese.

Grease the baking pan first then pour the contents into the deep baking dish,about 12x8x 2 inches.

Lay on the sausage on the top,then arrange and place the quarters of tomato around the sausage then spinkle the other cup of grated mature cheddar coating over all the ingredients.

Cover and place in your fridge all night or for about 8 hours.

Remove the pan from the refrigerator a good 30 minutes before putting the pan to bake in a preheated oven.

Bake, uncovered, and at 350 degrees F for 45 minutes.

Then check it is completely cooked through by inserting a knife into and around the centre of the baked dish, the knife should comes out clean without any moisture on it and then it is ready to eat.

Leave it to settle for about 10 minutes before slicing into portions.

As an optional addition rashers of vey crispy lean fried bacon are deliciousand complete this very tasty and hearty meal.
