With this easy to follow and simple to make we found this ideal cookie recipe for type2 diabetics.
This will provide a diabetic cookie that is not only delicious most any time but especially as morning snack,or afternoon break for type 2 diabetics.
This recipe satisfies my urges for something sweet and crunchy without feeling guilty, with easy instructions to follow and simple directions, you can make these delicious cookies.
Ingredients for these great tasting Crunchy Cookies.
• 1/2 cup butter is best but you can use any shortening.
• 2 eggs.
• ½ cup sugar substitute.
• 2 cups wholemeal flour.
• 3tbsp granola or mixed breakfast cereal.
• 1 tsp. baking powder.
• ½ tsp cinnamon.
• ¼ tsp. clove ground fine.
• ¼ tsp. salt.
• ¼ tsp. ground nutmeg.
• 1/3 cup skimmed milk.
• 1 cup sultanas.
• ¾ cup almonds toasted chopped rough.
Directions for this Type2 great Crunchy Cookie recipe.
Preheat your oven to 350 degrees.
1 Grease cookie sheets or greased shallow baking trays.
2 Mix together butter/shortening and the sugar substitute.
3 Whip the eggs, until nice and fluffy before adding to the mixture..
4 Combine the eggs flour, baking powder, cinnamon, salt, baking powder, nutmeg with the butter/ shortening mixture; mix together well.
5 Sprinkle in the sultans and chopped almonds and knead in to complete the mixture.
6 With a tea spoon scoop out a heaped amount, the flatten these out onto lightly greased baking sheets or oven trays about 2 inches apart.
7 Bake in the middle shelves of the oven at 350 for 10-12 minutes or until the cookies turn a golden brown.
