Chicken Bacon Salad, Avocado Recipe.

Ingredients for this great Chicken Bacon, Avocado Salad Recipe.
4 x 100g chicken breast fillets.
6 lean rashers smoked back bacon.
2 small ripe avocados, peeled, stoned and sliced fine.
100g/ 4oz sundried tomatoes, drained.
1 prepared bag watercress, rocket and spinach leaves.
1 prepared bag of green mixed herbs.
For a dressing:
2 tbsp olive oil.
2 tbsp balsamic vinegar.
2 tsp wholegrain mustard.
1 level tsp of brown sugar.
Freshly ground black pepper.
Salt can be added for taste (just a little)
Method for this recipe.
Cook the chicken under a medium hot grill for 10-15 mins do not overcook but check the chicken is cooked through.
During the cooking turn at least once to even cooking and the skin is crisp. let it cook turning until crisp.
Slice the chicken and bacon.
Place in a large bowl and leave to cool off a little.
Mix all your dressing ingredients together in a serving bowl.
Add together your sundried tomatoes, avocado and salad leaves add the dressing and toss to mix.
Divide the salad between your plates place each chicken breast on the top of the salad and serve.
(You can also cut each chicken breast into small cubes mixing in the chicken on each plate before serving)
Great tips: Try adding some sultanas and walnuts to introduce further flavours to this great summer salad.
Accompanying this salad you can serve some boiled small new potatoes or sweet potato mash.
