Chicken Breasts stuffed with Red Peppers Mozzarella cheese and cherry tomatoes,add some homemade red pepper sauce this is a feast for anyone, absolutely delicious.
Buffalo mozzarella (Italian: mozzarella di bufala) is a mozzarella cheese made from the milk of the domestic water buffalo rather than from cow's milk.
4 skinless chicken breasts.
• 1 ball Buffalo mozzarella,cheese sliced,(ordinary mozzarella is fine.)
• 8 cherry tomatoes cut in halves.
• A handful of basil leaves.
8 slices of air cured ham(Parma type ham). Red pepper sauce to taste.
• 4 red peppers cored and chopped.
• olive oil.
1 small bunch cherry tomato (about 200g).
• 1 vegetable stock cube.
• 2 tsp light Barbados or (Brown) sugar.
Heat the oven to 200C/fan 180C/gas mark 6.
To make the red pepper sauce sauce,put the chopped red pepper pieces onto a baking tray, drizzle on a little olive oil and mix with the peppers and cook for 15 minutes.
Cool them in a pan with the tomatoes and a covering of cold water.
Bring to simmer for 15 minutes,then add the stock cube and sugar mix and season well.
Blend to a smooth Red pepper sauce in a food processor.
2. Make a slit down 1 side of each chicken breast to form a pocket and season.
Stuff each of the 4 pockets with slices of mozzarella, equal cherry tomato halves and a quantity of the basil.
Wrap each chicken breast with 2 pieces of air cured ham and season each.
Put on a baking sheet and cook for 20-25 minutes or until nicely cooked through.
Serve with the red pepper sauce,some boiled minted new potatoes. Steam some seasonal vegetables such as broccoli until just crisp and crunchy. Half a couple of small courgettes and roast/fry in a suitable pan along with just a few ripe red peppers with a couple of table spoons of virgin olive oil until they start to turn a golden brown then serve.
As an alternative to the boiled new potatoes you can add these potatoes to the pan along with the courgettes and red peppers,the potatoes will then absorb a little of the cooking flavors of the frying or roasted vegetables and acquire not only the flavours of the veg but also with turn to a golden brown colour and have that crispy texture that makes this dish so tasty and worth taking that extra effort.
