Chicken dumpling Casserole

Chicken Dumpling casserole,with herbs and mixed root vegetables. A winter warming meal full of good things a balanced nutritious meal for all the family.

Ingredients for Chicken and Dumpling Casserole.

Vegetable cooking spray

11/2 cups milk.

3 Tbsp olive oil.

2 tsp. baking powder.

1/2tsp. salt.

4 chicken breasts boneless,and skinless.

1 medium-large onion finely chopped.

2 garlic cloves, mashed.

3 celery sticks, chopped.

1 pkg. 10-oz carrots chopped.

2 potatoes, peeled and cubed.

1/2 tsp.mixed dried herbs, crushed.

1/4 tsp. Fresh ground black pepper.

2 cans {14 oz. each} chicken broth.

How to make the dumplings first Dumplings:

into a medium bowl, milk and 2tsp of oil.

Gradually stir in flour, baking powder, and salt.

Mix well into a stiff dough consistency istency.

Preheat oven to 350 to degrees.

Spray your large casserole dish with cooking spray oil. Place your chicken Breasts into a frying pan with tsp of olive oil:

Cook on a medium heat for 2 mins each side to brown and seal only.

Place chicken breasts in bottom of casserole dish.

Cover chicken with onions, celery, and carrots.

Evenly sprinkle the mixed herbs with the salt pepper over vegetables.

Pour 2 cans of Chicken broth over ingredients.

Using the dough mixture, form 2-inch balls and drop on top of casserole mixture.

Cook for 1hour then check to see your meal is cooked through if not pop it back for another few minutes.

Serve 4 persons.

Fresh crusty bread rolls go well with this meal.
