Ingredients for this BBQ/Grilled Chicken, Bacon and Pineapple Skewers.
8 chicken thighs, boneless and skinless, cut into 1 1/2 inch chunks.
6 strips bacon, cut into 1 inch pieces.
1/2 pineapple, peeled, cored and cut into 1 inch chunks.
½ pineapple, peeled cored cut into large chunks.
1/2 cup lime juice.
½ tspoon of mixed dried herbs.
1 tablespoon chopped oregano.
4 garlic cloves, mashed.
1/2 cup good olive oil.
1 peeled onion chopped very fine
Directions for Chicken Kebabs and the basting and dipping Pineapple Dipping Sauce. Onto 8 long skewers, thread chicken, bacon, pineapple, alternating ingredients.
Set skewers on to a tray with sides similar to a baking dish.
Into a food processor bowl combine the pineapple juice, lime juice, oregano. Herbs and garlic and mix until you have a smooth liquid.
Pour enough of the pineapple juice mixture over the skewers, to coat and cover all sides of your kebabs thoroughly.
The flavour will be more intense if you cover the dish with the skewers with kitchen foil or plastic cooking film, then refrigerate for at least a couple of hours to let your marinate penetrative.
Take out your kebabs and wrap then in foil and set aside ready for cooking.
Before cooking the chicken kebab meal, prepare your pineapple sauce.
Take the remainder of the pineapple liquid from the skewers baking tray with the remainder of the liquid pour into a pan and add a cup of water then boil the pineapple liquid for 5 to6 6 minutes stirring gently to reduce the amount of what is the sauce.
Once this has boiled and reduced let it cool before adding the finely chopped onion for this dipping sauce.
To cook the chicken kebab skewers lay these on your BBQ grill with plenty of space between each.
