Ingriedients for Chicken salad recipes,this classic Ceasar Salad
4 slices of dry cured ham.
2 chicken breasts, with bone and skin removed.
1 tsp butter.
2 thick slices white bread, cut into1 inch cube.
2 small lettuce
For the dressing.
2 cloves of garlic.
75ml/3fl oz white wine.
2 egg, yolks.
3 anchovy fillets.
75g/3oz parmesan cheese, grated. rough
150ml/5fl oz extra virgin olive oil.
1 tsp grain mustard.
A little salt and pepper.
Preheat your grill on high.
Place your dry cured ham onto a tin foil or baking sheet and place under the grill.
Cook for 3-4 minutes, or until just crisp.
Remove the ham and place on a plate lined with kitchen paper to drain.
Cut both chicken breasts through the middle, without cutting through, to form one large butterfly shape flat piece.
Season, to taste, with salt and black pepper and coat with olive oil.
Heat a griddle pan until hot then place the chicken breasts on it and cook for 2-3 minutes on each side, or until cooked through.
Then place on a plate and leave to cool a little. And cut into small chunks
Heat a frying pan until hot and add the butter and then the cubed bread. fry until golden brown, then remove.
. Separate the leaves from the lettuce and tear into large pieces.
For the dressing, in a saucepan, bring the garlic and wine to a boil and simmer gently for about 5 minutes, until the garlic has softened.
Leave to cool.
Put the wine and garlic with the egg yolks, anchovies and cheese in a mixing bowl.
Blend with a hand blender or food processor until just smooth.
Add the oil in a thin steady stream, carefully and do not add it too quickly,otherwise it could split and curdle.
Stir in the mustard and add seasoning to taste.
Cut the crisp-fried ham into tiny pieces.
Add croutons and lettuce,mix and drizzle in a little dressing and toss to combine.
To serve, add your salad on a plate,and pour the dressing overyour salad andtop with the chicken.
