Easy Coronation chicken salad.
For the best results prepare the night or day before this gives time to bring out all the flavours in your ingredients and blend with the spices and fruit.
Coronation chicken salad can be made from chicken leftovers, or as with this recipe freshly cooked chicken breasts, roast chicken, baked chicken or chicken drumsticks any cooked chicken can be used.
Ideal with a large baked potato and some crunchy steam cooked vegetables like broccoli carrots,squash or sweet potato.
For Salads this is a dish to make your salads sparkle, on a bed of lettuce surrounded with green leaf herbs and lettuce, drizzle over a little balsamic vinegar and you have a great salad.
For sandwiches in a fresh crusty French stick or crunchy fresh baton add the coronation chicken and then on top some green leaf herbs it is so delicious you will never buy a sandwich again
Ingredients for coronation chicken salad
4 skinless, boneless chicken breast fillets - cooked and diced or shredded.
4 stalks celery,chopped.
1/2 a red onion, chopped fine.
1 small apple, peeled,cored and chopped.
50g (2 oz) sultanas.
50g (2 oz) seedless grapes, halved.
50g (2 oz) chopped toasted pecans or toasted almonds.
1/8 tsp freshly ground black pepper.
¼ tsp cinnamon.
1/2 teaspoon curry powder.
175g (6 oz) mayonnaise.
To reduce the fat content and calories use light mayonnaise, Or as we prefer half mayo and half crème fraîche.

Into a large salad bowl combine all the ingredients, the chicken, celery, onion, apple, raisins, grapes, cinnamon nuts, black pepper, curry powder and mayonnaise.
Mix all these together and refrigerate over night or for about 5 hours if possible to enhance all the mixed flavours,
Tossing to coat the herbs and lettuce salad with the dressing and it is ready to serve!
