Dacre Rabbit or Wild Rabbit,Game Slow Cooked with Veg and Herbs
Dacre Rabbit is wild rabbit from the hills its lean meat used to be widely available as a cheap and meaty meal now in much demand and exported to select gourmet restaurants.
Slow cooked Rabbit/Game
3 tbsp of butter.
1 Dacre Rabbit(or any other wild rabbit your butcher recommends) (portioned), or use 4 - 6 rabbit jointed portions.(about 3lbs).
2 Onions peeled chopped course.
6 garlic cloves, peeled and chopped.
3 large tomatoes, peeled and chopped OR one tin of chopped tomatoes .
2 tablespoon tomato paste.
6 carrots peeled and sliced.
100 grams of dry cured type ham cut into 1” squares.
.3tsp of good quality balsamic vinegar.
3 sticks of celery.chopped rough.
1 cup tinned butter beans.
½ cup of peas.
2 bay leaves.
1 tbsp of mixed dried herbs.
1 cup of mixed dried mushrooms.
one tablespoon of oregano and one of basil.
1 stock cube stock granules dissolved in 1 1/2 pints of boiling water.
salt and fresh ground black pepper pepper.
1 ½ large cup of cups red wine (about 500ml).
flour to coat rabbit portions.
Into your slow cooker add the ingredients as per the following directions
Add a little salt and black pepper to flour and put this on to a wooden cooking board.
Mix well. Roll the rabbit portions in the seasoned flour.and coat completely.
In a large frying pan add the butter and fry to cook rabbit until browning on all sides then take out and put on one side.
Add onions, garlic, tomatoes celery to the slow cooking pot.
Pour over the the 1 ½ pints of stock cube water.
Add in tomato paste,, peas, beans bay leaves and all herbs.
Bring to the boil then add in your wine and simmer in the slow cooker for 6 hours check after 5 hours. add more wine and water if you need more gravy/sauce.
Your tasty Decre rabbit will serve 4/6 persons.
Serve with pasta and a green salad. Or baked potatoes with butter or cottage cheese or just fresh crusty chunks of bread.
