Type2 Diabetic Almond Cookies Recipe

1/4 cup butter.

1/2 cup Non Sugar powdered sweetener.

1 egg.

1/2 tsp. Almond food extract.

1 cup Muesli or granola or any natural breakfast mixture.

1/2 tsp. baking soda.

12 Toasted almonds, chopped.

Preparation for this Type2 Diabetic Almond Cookie recipe:

Preheat oven to 375 degrees.

Spray a cookie sheet, or an oven tray with oil spray.

Into a bowl, cream butter and powdered sweetener, baking soda and museli or breakfast cereal until hand mix until combined.

Whip the egg until fluffy, add almond extract,and mix well and set aside.

Add the cereal mix whipped egg mixture, and nead together to blend...

With a tbsp. spoon scoop out and make ¾-in balls.

Flatten these into round or other shapes and place gently on to the prepared cookie sheet or oven tray.

Spoon some chopped almonds on the top of each of your cookies, and presses them in gently.

Bake for 10-12 minutes when they are golden brown take from the oven and just let them cool to crisp up before eating.
