Easy Chicken Dumplings
This is an easy meal to prepare and a very tasty satisfying dinner to enjoy on a dark cold winters evening.
Ingredients for this Easy Cchicken Dumplings dish
1 large 3 to 5lbs whole bird.
Season with a little salt and freshly ground black pepper.
2 tbsp olive oil.
8 rashers of streaky bacon, cut into ½in slices.
1 large onion, peeled, roughly chopped.
2 large carrots, peeled, cut diagonally into 2cm/½in slices.
3 celery sticks chopped rough
700ml/1 pint 5¼fl oz chicken or vegetable stock.
3 small sprigs fresh thyme or 1 tbsp of dried thyme.
Ingredients for the cheesy herb dumplings to
350g/12¼oz plain flour, plus extra for dusting.
1 tsp bicarbonate of soda.
1 tsp salt.
2 tbsp of mixed dried herbs such as parsley,rosemary or chives.
300ml/10½fl oz skimmed milk
25g/1oz cheddar, finely grated.
Method for this easy chicken Dumplings dish
1. Preheat the oven to 180C/350F/Gas 4.
The easy chicken dumplings casserole dish is as old as cooking itself.
It is still a great tasty dish even though some recipes have made it to exotic.
If you use the everyday natural vegetables that are easily available that it is still the most flavorsome dish on a winters day that will feed all your family.
2. Cut through the bird in half.
Remove the legs and joint them into thighs and drumsticks.
Cut through the breast bone to give you 4 pieces of chicken breast,you should have 8 pieces of meat.
Season the pieces, to taste, with salt and freshly ground black pepper.
Heat the olive oil in a large casserole oven dish with a tight fitting lidover a high heat.
Add the bacon and fry for 1-2 minutes, or until crisp and golden-brown take and set aside.
Add the meat pieces to the casserole dish,fry gently turning each piece until browned on all sides.
Remove all pieces from the casserole dish and set aside on a warm plate.with the bacon.
Add the onion and carrots to the casserole and fry in a little olive oil for 2-3 minutes, or until golden-brown.
Add the cooked bacon and chicken pieces to the dish casserole.
Pour over the stock, stir well, then add the thyme and season, to taste, with salt and freshly ground black pepper.
Heat the contents slowly to the boil, then cover the casserole with the lid and transfer to the oven.
Cook for 20 minutes.
Directions for making the Cheesy Herb Dumplings
Sift the flour, bicarbonate of soda and salt into a large bowl.
Add the herbs and mix well, then make a well in the centre of the mixture.
Pour 250ml/9fl oz of the skimmed milk into the well.
Knead and mix by hand the flour and milk mixture together add more flour or more of the remaining skimmed milk as required.
The mixture just comes together and should make about 8/10 soft doughballs the size of a golf ball.
Remove the casserole from the oven,and then increase the heat to 230C/450F/Gas 12.
Roll your dumplings in the grated cheese and press in the cheese into the dumplings.
Arrange all your dumplings on top of the chicken mixture, leaving a space between each dumpling to allow them to spread during cooking.
Sprinkle over the dumplings the remainder of the grated cheese.
Return your chicken and dumplings to the oven, uncovered, and cook for a further 10 minutes.
Reduce the heat to 200C/400F/Gas 6,and continue to cook the casserole for another 20 minutes, or until the dumplings are crisp and golden-brown and the chicken is cooked through.
This easy chicken Dumplings recipe is not hard to vary it by changing some of the ingredients any chikicken duck or even rabbit cab be used as the basic meat and you can add vegetables of your choice to make it your own easy special health recipe.
Serves 4/6 persons.
