Coronation named chicken dish has now become a world food classic this easy to prepare dish is said to have been inspired by jubilee chicken, a dish prepared for the silver jubilee of the British king, George V in 1935, which mixed cooked chicken breasts with mayonnaise and curry.

This recipe is a modern version credited as being invented as part of the preparation of the foods for the banquet of the Coronation of Queen Elizabeth II in 1953.

The preparation of cooked cold chicken, mixed with curry creamy sauce and dressing become this popular Chicken dish available world wide.

This recipe is so easy and versatile and cam be used on so many occasions from informal friends gatherings, BBQ events, and as a starter at those special dinner parties.

One of its favorite uses is as a filling in a sandwich, in fresh crusty bread,roll or baguette with a little lettuce,sliced tomato is is hard to better for an appetizing deliciously tasty and fulfilling midday meal break.

Ingredients for this Royal Chicken Recipe.

4 pre cooked skinned chicken breasts cut into bite size pieces.

200ml chicken stock.

2 sprigs thyme.

Juice of a small lime.

1 tsp. of curry powder

1 bay leaf.

½ teaspoon coriander seeds.

70/100 gram pack of fresh herbs or salad leaves.

350ml mayonnaise.

1 tablespoon mango chutney.

Flesh of 1 fresh mango, finely diced.

¼ tsp. of sea salt.

½ tsp. Freshly ground black pepper.

1 orange peeled cut each segment in half

3 tbs. of chopped walnuts.

2 tbsp. of sultanas of chopped grapes.

Flat- leaf parsley for garnish.

Directions for this Coronation Chicken recipe

  1. Mix the chicken stock with the mayonnaise to reduce the thickness.
  2. add the curry powder and mix in gently.
  3. Add the lime juice, mango chutney in with the fresh mango and gently stir in.
  4. Add the chopped walnuts and sultanas.
  5. Add the salt and pepper with the bay leaf thyme and coriander seeds gently stir in.
  6. Cover and refrigerate for 2/4 hours to enable all the ingredients flavours to open.
  7. Serve on a bed of the fresh herbs or salad leaves then garnish over the chicken with the parsley.
