One of my favourites simple to prepare meals, is to is to shred a small cup full of mature Cheddar Cheese, add 3 medium size chopped tomatoes.

Mix together with pepper and a little salt, then with 2 thick slices of par toasted whole grain bread, divide the contents and spread thick and evenly, add pinch on each of mixed dried herbs.

Pop under a preheated grill, when they start melt, bubble and turn brown they are ready to eat,add a little mixed salad and that is a great tasty lunch.

Sardines, mackerel,tuna

Most any tinned fish on toast are OK for an easy diabetic lunchtime snack and contain the oils that are very healthy are a great savoury light meal again you can garnish and serve with a little salad and tomato.
