Easy Pasta Salad
Easy pasta salad recipes ingenious start to make a wonderful meal, the basic ingredients add prawns to makea prawn salad or add to a potato salad and so on.

200g frozen peas.
2 large tomatoes chopped rough.
10 sun dried tomatoes in oil.
2 tbsp ex virgin olive oil.
2 tsp white wine vinegar.
2 garlic cloves chopped fine.
large handful fresh basil leaves.
About 15 fresh mint leaves.
85g pack prosciutto or any dried ham even salami would be OK.
Preparation for this Easy Pasta Salad Dish.
1. Boil the pasta in salted water for 8 minutes or as per the instructions on the packet then add the frozen peas, and boil them for a further 2 minutes more until the pasta and peas are just tender.
Pour the contents into a colander over the sink, cool down the pasta and peas under the cold water tap then drain.
2. MAKE your dressing while the pasta is cooking.
Chop the tomatoes and put in a food processor with half the sun-dried tomatoes, the olive oil, vinegar, garlic and about 1/2 basil leaves.
Season with a little salt and plenty of freshly ground pepper then mix/ whisk until nicely smooth.
Pour the mixture into a large salad bowl.
3. Add the dressing to the pasta and peas, slice thin the rest of the sun-dried tomatoes and add to the pasta with the remaining basil and mint leaves.
Cut in the prosciutto,dried ham or salami into sizable piece and toss everything together.
You can serve your pasta, peas, herb and meat on a plate with your salad on a separate plate like a side salad,or serve the pasta on a larger plate with the salad served around the pasta
