This homemade delicious creamy soup, slow cooked really brings out all the flavour of the celery.
Celery did not come into general use in England until the early nineteenth century.
Since then, its crisp, nutty texture and flavour has been much appreciated in salads but especially in soups.
2 Medium Onions,peeled and thinly sliced.
1 large head Celery sliced in chunks.
25 Gram Butter (1 oz).
2 tbsp of plain flower.
1 ltr (1 3/4 pints chicken stock(use a cube if you haven't got some homemade stock.
Salt and freshly ground pepper.
300 ml Milk (1/2 pint).
3 Tablespoon Double cream.
2 Tablespoon Fresh parsley or min leaves, chopped fine or a few torn celery leaves.
In a saucepan fry onions and celery gently in butter for 10 minutes without browning.
1 preheat your slow cooker on HIGH.
Meantime add the butter stirring and add the vegetables stirring gently.
Remove from the heat and stir in the flour slowly to keep free from lumps.
Add the chicken stock liquid stirring gently to combine the ingredients then fix the lid and cook on low for 6-8 hours.
Liquidize or rub the vegetables through a sieve, return to the pan and stir in milk.
Bring to the boil, stirring and simmer for 5 minutes adding a little salt and the freshly ground pepper.
Ladle into warm soup bowls. Stir in cream and sprinkle with parsley or decorate with a few celery leaves.
Serve this great tasting cream of celery soup for lunch or dinner as a starter with crusty rolls,or with a green leaf salad. Serves 4 persons
