Easy Spanish Omelettes
This recipe is so and you can use whatever you have left over in your fridge, such as cheese, bacon, fresh herbs or sliced cooked potatoes.

This is an easy cheap meal, sliced you can eat hot straight from the pan or slice it into wedges cut up a couple of tomatoes and put it in a packed cold lunch box with some fruit its an ideal working persons diabetic lunch.
There are plenty of ideas to enhance this as a cold meal you can buy a couple of fresh bread rolls onion or seeded cut in half spread a little mayo with a little whole grain mustard mash or break up the omelette and the tomato into the rolls and enjoy it like this it is a substantial and healthy meal.
Ingredients for this spanish omelette
400g bag spinach leaves.
3 tbsp olive oil.
1 large onion finely sliced.
2 large potatoes peeled and finely sliced.
. Putp your spinach into a large colander and boil a kettleful of water.
Slowly pour the boiling water over the spinach until wilted, then cool under cold water.
Squeeze all the liquid out of the spinach and set aside.
Heat grill to high. Heat the oil in a good quality non-stick frying pan and gently cook the onion and potato for about 10 mins until the potato is soft.
While these are cooking, beat the eggs together with a whisk in a large bowl and season with salt and pepper.
Stir the spinach into the potatoes, then pour in the eggs and cook, stirring occasionally, until the mixture is almost firm, then flash heat the omelette under the grill to brown and cook the top.
Put a plate over the omelette and turn the pan over so that omelette drops on to the plate then slide the omelette back into the pan and again flash heat the omelette again to finish the cooking leave it for two minutes to settle and set then cut and serve.
