This is an easy yet simple tasty aubergine cheesy pasta bake, herbs and spices dish with the pan fried aubergines add so much extra taste to this simple meal

Ingredients for this Easy Aubergine Pasta bake dish
250g aubergines,thickly sliced.
2 tbsp of virgin olive oil.
2 tsp wholegrain mustard.
3 garlic cloves, sliced or crushed.
150ml vegetable stock (from a cube is fine.
250g Penn pasta (or other tube shapes).
3 tbsp flat-leaf parsley chopped.
zest 1 lemon.
Put the aubergines into a frying pan with the olive oil,and cook on a medium heat for 2/3 minutes stirring frequently but gently until the skin turns brownish at the edges,it is better to under cook but do not overcook or blacken the skins.
Add to the pan of aubergines the mustard, garlic and vegetable stock into a frying pan.
Bring to the boil and simmer for 5 mins or until the stock has nearly all evaporated and the mushrooms are soft.
Meanwhile,cook the pasta according to pack instructions.
Drain the pasta and top with the aubergines, garnish the parsley and lemon zest.
Season with salt and black ground pepper to taste and serve straightaway.
