Easy Finger Sandwiches
Easy finger sandwiches,with a chicken filling.
Sandwiches are a great standby for any occasion,whether its for a picnic, kiddies party or whether they are for your lunch getting the right balance is in your individual taste this easy tasty recipe can be changed,if you don't like cinnamon or curry you can leave them out,but leave in the basics.
For the best results prepare your chicken filling the night or day before this gives time to bring out all the flavours in your ingredients and blend with the spices and fruit.
This chicken recipe can be made from chicken leftovers, or as with this recipe freshly cooked chicken breasts, roast chicken, baked chicken or chicken drumsticks any cooked chicken can be used.
For sandwiches small finger buns are ideal not only because the size is easy to handle and therefore easier to eat they are less awkward to pack.
There is of course a wide variety and selection of bread you can use for sandwiches in a fresh crusty French stick or crunchy fresh baton add the chicken based filling and then on top some green leaf herbs it is so delicious you will never buy a sandwich again
Ingredients for finger sandwiches recipes are almost endless this chicken based filling recipe has been called Coronation Chicken.
The same formula has been adapted with different ingredients which you can change for example adding sliced tomato,cucumber or some crispy left over bacon and named differently.
4 skinless, boneless chicken breast fillets - cooked and diced or shredded
4 stalks celery, chopped
1/2 a red onion, chopped fine
1 small apple - peeled, cored and chopped
50g (2 oz) sultanas
50g (2 oz) seedless green grapes, halved
50g (2 oz) chopped toasted pecans or toasted almonds
1/8 tsp freshly ground black pepper,
¼ tsp cinnamon.
1/2 teaspoon curry powder
175g (6 oz) mayonnaise.
To reduce the fat content and calories use light mayonnaise, Or as we prefer half mayo and half crème fraîche.
Preparation and Directions
. Into a large salad bowl combine all the ingredients, the chicken, celery, onion, apple, raisins, grapes, cinnamon nuts, black pepper, curry powder and mayonnaise.
Mix all these together and refrigerate over night or for about 5 hours if possible to enhance all the mixed flavours.
There is no need to add butter or any spread to your finger sandwiches,the mayonnaise filling is sufficient.
A little lettuce or green leaf salad always adds that bit more enjoyment to any sandwich!
