Chicken breasts in a rich Spanish paprika sauce make a wonderful main course or tapas.
Simply sauté the chicken breasts, then sauté and whirl paprika, onions and pepper to make the sauce.
In about 30 minutes you have a great appetizing and colourful, very Spanish Main meal.
To make this recipe into tapas for a simple supper with friends, cut the chicken breasts into small pieces and serve with the paprika sauce on top of toasted baguette slices.
Since this dish keeps well, make it ahead for a dinner party or a casual celebration.

This Chicken Breast in Paprika Sauce recipe can be served as a main course or as a tapas or first course on its own.
Wash lightly the chicken breasts and pat dry with kitchen paper. Cut each chicken breast in half.
Add the flour into a plastic bag and add 1/2tsp salt.
Add in some of the pieces of chicken into the bag and shake to coat completely.
Repeat until all pieces of chicken are coated in flour.
Into a large frying pan add a little olive oil and heat on medium, cook the chicken until brown on both sides, then cover and put aside for later.
Finely chop the peeled onion and the green pepper.
Pour more olive oil into the frying pan and sauté vegetables on low heat until onions are translucent and peppers are soft.
Into the same frying pan, raise heat to medium and add flour slowly and mix.
Fry flour, stirring gently at the same time slowly adds chicken broth while continuing to stir until sauce thickens.
Add paprika and salt and continue to stir.
Add the mixture into a food processor and blend smooth.
Return your chicken breasts to the frying pan on a medium heat for 2 minutes before adding the blended sauce over chicken.
Simmer until chicken is fully cooked, about 8 minutes.
Serves 4 persons
Spinach and broccoli steam cooked to keep in all the nutriments go well with this and if available, fried baby crushed new potatoes or just fried potatoes cubes, or rice.
