INGREDIENTS for Curried Lamb.


For 2 Persons.

  • 4 steaks of Lamb cut,and diced in cubes.
  • 2 tablespoon of olive oil and crushed.
  • 3 small onion, thinly sliced.
  • 1 tablespoon of curry powder.

  • 2 ripe tomatoes, peeled and chopped.
  • A little coriander for garnish.
  • 1/4 cup of water.
  • 1l apple,cut and diced small.
  • 3 tablespoon of sultanas.
  • 2 tbsp of peanuts.
  • 1 tbsp of dessicated coconut.
  • 1 banana sliced.
  • 1/4 of a cucumber sliced thin

Cooking Instructions for this lamb curry

Using sharp knife cut away any fat on the meat steaks.

Cut the meat into 1 inch cubes.

Heat oil in a heavy saucepan.on medium heat to high.

When the oil is hot enough add in the meat and stir until it has seared all sides and take out the lamb place on a plat and cover.

Add the chopped garlic into the pan and cook for 1 minute,

Add the onions, and curry powder and cook over a medium heat, stirring gently, for about 2/ 3 minutes, or until onions are tender.

Add the tomato and water and keep on stirring constantly for at least another minute.

Add meat to pan again, stir constantly over a high heat until the meat is well coated with curry mixture.

Bring to a boil,then reduce heat cover the pan and simmer,for about 30 minutes or until the lamb is completely tender.

Stir in apple and 2 of the3 tbsp of the sultanas, simmer and cover, for 5 minutes or until apple is nice and tender.

Boil either normal long grain white rice or the healthier brown rice.

Serve your chosen rice on the plates and spoon the curry onto your rice.

Sprinkle some of the coconut first on to the dish,then the coriander garish.

Finally add some of the remaining sultanas,peanuts, banana, and cucumber on to your curry before you eat this wonderful dish.
