This is a wonderfully tasty Slow cooked minted lamb meal
The conbined mixture of Mint, Rosemary and mixed dried mushrooms add a wonderful aroma to the delicate flavours to this melt-in-your-mouth tender lamb dish.
This slow cooked lamb should cook for about 8 to 10 hours depending on size and at little more if they weigh more,sometime you can't get them all equal weights.
Our Ingredients for lamb shank start as follows:
3 tbsp olive oil.
4 to 6 lamb shanks, about 6 pounds.
1/2 bottle Bordeaux or other dry red wine(not expensive).
3 tbsp grain mustard.
1 tsp balsamic vinegar.
1/2 tsp salt.
1/2 tsp black pepper.
1/2 tsp dried rosemary.
1 1 tsp dried parsley.
4 large cloves garlic,chopped fine.
6 ozs chopped fresh mushrooms and 4 ozs mixed dried mushrooms.
1 large carrot, diced.
5 large onions peeled, cut into 8 wedges each
Preparation for this lamb shank recipes meal
Put the Onion segments in boiling water and boil for 3 minutes.
Transfer them to cold water.
In a large frying pan over medium-high heat,heat your olive oil.
Cook the meat in the hot oil, turning frequently, until browned on all sides,take out the shanks whilst keeping the hot olive oil in the frying pan.
Place the browned lamb in a large slow cooker.
Add the par boiled onions in to the slow cooker.
Mix thoroughly the wine, mustard, vinegar, salt, pepper, rosemary, parsley,garlic;in a dish and put on one side.
Into the hot frying pan, add 4 Oz chopped fresh mushrooms and carrots.
Cook the mushrooms and carrots for about 5 minutes, stirring constantly.
Spoon the carrots and mushrooms over lamb shanks in the cooker.
Add 1 cup oven cold water to the frying pan and bring to the boil stirring gently so that the boiling water absorbs the brown cooked reside from the frying pan and pour that liquid into the cooker.
Pour the wine,mustard,vinegar,herbs etc mixture into the slow cooker.
Cover and cook on HIGH for 2 hours. Reduce heat to LOW and cook for 6 to 8 hours longer.
With this dish can serve with boiled potatoes,or if you want to make this meal special.
Par boil your potatoes and to then finish off the cooking, pan fry them in a little olive oil to get the potatoes skins golden brown and crispy these are great.
Buttered squash, or crisp steamed or boiled broccoli go well together,or simply add some(cooked from frozen)garden peas.
