Ingredients for this easy meatloaf pork recipe
750g Pork Fillets.
2 Red Onions chopped fine.
1 Cupfinely crushed dried Fresh White Breadcrumbs.
2 Eating apples peeled coredand grated.
2 Extra eating apples peeled cored.
2 tbsp Horseradish Cream.
2 tsp Brown sugar preferred,white will do.
2 cm-piece Fresh Ginger Grated,tinned can be used mashed.
Salt and fresh ground pepper to taste.
This is a substantial meal but it can also be that something extra you sometimes crave, a bit of comfort food as well. This is one to try; one great advantage is you can prepare the pork mixture several hours in advance.
Eating apples work well as a topping as they're sweet and crunchy, but most other varieties won't let you down if they are not sweet enough you can always add a little sugar!
Method for this meatloaf pork recipe.
Preheat oven to 180°C.
Line the base and sides of a deep loaf baking tin with baking paper. Place your pork loin into a food processor and process until mixture is ground completely.
Transfer your ground meat to a large bowl. Add onion, breadcrumbs, apple, horseradish ginger and egg.
Season with a little salt and fresh ground black pepper.
Gently stir until all the contents are well combined.
Add all the contents into the line baking tin and smooth over the top.
Cut extra apples into quarters, remove core and then cut into thin slices.
Arrange slices in an interlocking pattern on the top of the meatloaf, making sure the slices overlap slightly.
Sprinkle over the apple slices a little brown or white sugar.
Bake for 40 minutes and check the top, to see if it is browning to quickly if it is cover loosely with tinfoil and cook for a further 15 minutes.
Remove the tin foil check and cook further if required until cooked through.
Remove the baking tin and let your meatloaf stand for 5 minutes before removing loaf from pan.
Serve in thick slices.
To make Dill mash: Peel potatoes,(2/3 med per person) and cut into small pieces,put into a medium size pan and cover with cold water.
Bring to the boil, reduce heat and simmer for 25 minutes or until tenderthen drain and mash.
Add 125 gram natural yoghurt or creme fraich,1 tbsp per 3 potatoes and continue to mash until smooth.
Spinkle in the dill and fold in the dill until smooth.
To season and salt and pepper.
Serves 4 persons.
