• 2kg fresh mussels.

• • 150ml dry white wine.

• • 2 small red onions peeled sliced fine.

• 25g butter.

• 1 tsp plain flour.

½ cup chopped fresh parsley.

Plenty or fresh crusty bread rolls.

Like most good mussel recipes they are simple and easy dish to make but very tasty.

The curry taste is subtle and different as it adds just that little extra spicy flavour that makes you want more.

Scrub the mussels in a large bowl of cold water pull off the little beard and throw away any that are open.

Once they are cleaned put the mussels into a large pan then empty the wine over them and stir in gently.

Cover the pan with its lid and bring to the boil, then shake the pan, the high heat this will open the mussels after 3 to 4 minutes.

Pour the mussels with the wine into a large serving bowl.

Carefully take out any mussels that are still closed and throw them away.

Drain the liquid (wine) that is left through a sieve into a pan and put on a low heat to keep it hot.

Return the mussels in the pan to a low heat with the lid on to retain the moisture and keep the mussels hot.

Fry the sliced onions in the butter in a pan until they are softened and translucent, but not browned.

Then stir in the flour and curry paste to combine these, and cook for about 1 min.

Add the wine liquid carefully and discard the last little bit of liquid as it may have a little sand or grip in it and season with pepper only, the mussel juices will contain salt.

Add in the crème fraiche and stir gently on the low heat as the wine and crème fraiche combine together.

Spoon the mussels on to 4 large bowls.

Pour over the hot creamy sauce, spinkle over the fresh parsley and its ready for 4 persons to enjoy.

The fresh crusty bread rolls are optional and only for those who like to dip and mop up all that tasty sauce,but you dont have to if you feel its beneath you personally we will fight for what is left.
