Baked Salmon a feast fit for a king or just a family.

Serves 6 persons.
6x 1inch salmon steaks.
salt and pepper to taste.
a pinch of grated nutmeg.
2 small shallots finely chopped.
1 tbsp (15 ml) chopped parsley.
2 tbsp (1 oz) 25 g butter.
1 doz fresh Basel leaves.
(100 ml) dry white wine.
1 tbsp of olive oil.

Directions for this Baked Salmon dish

Preset the oven at 190°C (375°F ) gas 5.

Line a medium size shallow oven dish or metal tray with kitchen foil,lay the foil and pinch in the corners to form a inner tray that will contain the wine.

Brush the inner surface of the foil tray with the olive oil to prevent the salmon sticking.

Wash and wipe dry the fish and lay the fillet’s on the foil with plenty of space between so as to be able to tun them over easily.

Add to the fish the salt, pepper and sprinkle over after a little grated nutmeg on each fillet of fish.

Then add the finely chopped shallots and shake a little the parsley over each fillet of fish.

Add a little knob of the butter to each portion.

Place the tray in the preheated oven and cook for 7 minutes,before adding the glass of wine a little over all the fish.

Continue to cook for a further 18 to 20 minutes before carefully lifting out each fish.

Pour over each fish the wine and juices from the cooking tray and serve hot on a bed of fresh lettuce and green salad.

Drizzle a thick line of mayonnaise around the sides of each plate garnish with the green Basel leaves and enjoy the natural tastes of the salmon merging with the flavours of the dry wine along with the crispy fresh green salad.
