Salmon Prawn Sauce
Kate’s classic prawn, cheesy and creamy salmon.
1 tablespoon extra virgin olive oil.
1/2 Cup dry white wine (Chardonnay, Sauvignon Blanc, etc.)
1 cloves of garlic mashed (reduce to 1clove if desired)
1/2 Cup single cream.
1/2 cup milk.
1/2 cup grated mature cheddar.
1/2 cup small prawns (defrosted).
Heat a non-stick pan over medium-high heat for 1 minute..
Add to the pan milk and grated cheese slowly and stir in the heat while they merge as they thicken.
Add the wine and simmer for a further for 2 minutes.
Then add the prawns for a further 2 minutes.
Finally add the cream and stir until it starts to bubble and thicken.
Empty the pan contents into a serving bowl and pour over the salmon.
Season sauce to taste with a touch salt, and a twist of fresh ground black pepper.
Add the juice of 1 lemon wedge to each plate and serve for 4 persons.
