Potato Salad Recipe

8 oz diced peeled potatoes.
4 slices bacon.
4 small pearl small onions, diced.
1/4 cup white vinegar.
2 tablespoons water.
2 tablespoons brown sugar.
1/4 teaspoon salt
1/4 teaspoon ground black pepper.
1 tablespoon chopped fresh parsley.
1 tablespoon chopped fresh thyme

Directions for German Potato Salad

  1. Place the potatoes into a pot, and fill with enough salted water just to cover them.
  2. Bring to a boil, and cook for about 12 minutes, or until a knife easily pierces them.
  3. drain off the water cover them and put on one side to cool Put your bacon into a large deep frying pan and cook over medium to high heat until both sides are crisp.
  4. Remove the bacon from the pan and put on one side and keep hot.
  5. Add the chopped onions to the grease in the pan, and cook over medium heat untilthey brown.
  6. Add the water, sugar,vinagar,salt and pepper to the pan.
  7. Bring to a boil, then add the potatoes and mix the contents and parsley and thyme.
  8. Mix in the tub of creame frais only until it is heated through and starts to thicken then remove the contents into a serving bowl.
  9. Crumble in the bacon into tiny pieces and spread the pieces of bacon over the top of your serving dish and serve warm.
