Potato Soup Recipe with a Creamy Watercress extra

Potato soup recipe

You can vary the easy recipes and add more ingredients like cooked bacon,or cream cheese or even cooked sliced sausages of your choice.

3 carrots, sliced.
4 medium washed and finely diced.
3 ribs celery, chopped.
2 garlic cloves crushed.
1 Medium size onion peeled and sliced.
1 litre(1 3/4pints) hot chicken stock or .2 chicken stock cubes.
1 tab of granules, or equivalent chicken base.
1 bunch of watercress with stalks chopped fine.
2/3 cup evaporated milk.
1 tablespoon butter.
Salt and fresh ground black pepper.

Directions for this Potato Soup

  1. Heat the butter in a large frying pan, add the onions and cook gently for a couple of minutes until they softened but Not browned.
  2. Add the remaining ingredients except the evaporated milk and bring to the boil, then transfer the contents to your slow cooker.
  3. Put the lid onto the cooker and cook on a low heat for 7-8 hours.
  4. Liquidise or blend together the contents until they are smooth (you may have to do this in small batches.)
  5. Return all the soup to the slow cooker and stir in the evaporated milk to your soup, bring up to simmer for 15 minutes stirring occasionally and season to taste.
  6. Serves 4-6 persons.
  7. Fresh crusty rolls go well with this light meal.
