Cooking in a pressure cooker is easy and certainly saves time and many of the vitamins and essential minerals in the food are saved adding to a healthy eating regime without any direct or special effort with this easy to prepare dish.
Ingredients for Lemon Chicken Pressure Cooked
(3 to 4 lb.) chicken, cut up into 6/8 pieces.
Salt and ground black pepper to taste.
2 to 4 tbsp. olive oil.
1 onion chopped rough.
1 tbsp. finely chopped garlic.
1 400 gram can. Chicken broth.
4. Lemons juiced.
1 cup. Chopped parsley.
2 sticks. Chopped celery.
2 tsp. chopped fresh oregano or 1 tsp. dry oregano.
tsp. chopped fresh basil or 1/2 tsp. dry basil.
2 tbsp of olive oil.
2 tbsp. flour.
4 tbsp. cold water (optional).

Sprinkle the chicken pieces with salt and pepper.
Heat olive oil in a 4 or 6-quart pressure cooker.
Cook to brown chicken a few pieces at a time, in 1 tbsp of olive oil set aside.
Return all chicken to pressure cooker with onion and garlic.
Add the chicken broth and all remaining ingredients, except flour, and water.
Close pressure cooker securely with pressure regulator in place.
Cook 10 minutes at 15 pound pressure.
Cool cooker at once.
Remove the top after pressure has ceased.
Blend flour and water carefully to avoid lumps and stir until the liquid thickens.
Remove to heated dish and serve to at least 4 persons.
