Mix well the butter until very soft then add the crushed garlic and chopped parsley. Mix well well until completely blended.

With your fingers, lift the skin away from the flesh of the turkey crown carefully, then inset your fingers easing the skin away from the bird.

Do this a little at a time on each side until patches of the skin are free.

Once there is a gap between the flesh and skin free, gently smear the flavored butter over the flesh then re-cover with the skin and secure the neck flap with either sewing with fine twine and a trussing needle or skewers.

Place the bird upside down in the roasting tin and place the onion, garlic bulbs and parsley in the open body cavity then cover with kitchen foil for cooking in the oven.

To calculate cooking time allow 20 minutes per kg plus 90 minutes.

Once cooked empty all the juices including those remaining in the bird remove for the basis of your gravy /sauce.

Place the turkey on the platter preferably with ridges to collect juices for your gravy you always need more.

Then re- cover with tinfoil and cover with a clean towel and leave for at least 20 minutes to cool. this will make it far easier to carve.
