Braised Mutton Chops with Celery this recipe this very tasty casserole dinner that can easily impress friends for a dinner party or just a special evening at home for two,perhaps with a bottle of not expensive red wine.
This meal is suitable for Type2 diabetics as well.
Special Casserole Ingredients.
Braised Mutton Chops with Celery Recipe with Mutton Chops, Celery, Carrot, Onion, Butter and Stock.
INGREDIENTS for Casserole Dinner.
2 lb (900g) Breast of Lamb cut into chops.
1 Medium Carrot.
1 Large Onion.
1 Clove of Garlic crushed.
1 oz (25g) Butter.
2 tablespoon Mint Jelly.
1 dessertspoon Flour.
1 pint Lamb Stock or stock cube liquid.
Add just a little Salt & Pepper to taste.
I large cup of red wine.(optional)
Prepare and cut the vegetables into small pieces and fry them in the butter until they are crunchy almost tender.
Then put them into a casserole dish with a tightly fitting lid. Fry the chops in a separate pan with a table spoon of olive oil each side until nice and browned.
Empty the chops on to the vegetables. Pour in the stock.
Add the mint Jelly.
Add the wine to the contents dish.
Sprinkle flour and stir to separate.
Cover the dish with the lid closely.
Place in a moderate oven and bake at (375F, 190C, Mark 4) for one hour.
Take the cutlets out of the dish and place in a hot dish then serve.
