Toad inthe Hole with Caramelised Onion Gravy, its Cheap and Very Tasty
INGREDIENTS for toad inthe Hole.
Toad inthe Hole is an easy but filling dish to make,it is said to have originated from in the Mill towns in Northern England during the industrial revolution it was one of the cheapest and filling meals to provide for a family usually made just before pay day when money was short.,
400g plain flour.
1/2 tsp English mustard powder..
12 fresh Basel leaves.
12 thick pork sausages.
2 tbsp fine olive oil.
3 onions,peeled and finely sliced.
1/2 tsp soft brown sugar.
500ml beef stock.
3 tbs of finely shredded strong mature cheece Cheddar is good
Directions for Toad in the hole
Any sausages can be used which is the basic ingredient, but you must roast or fry them as little first to seal in the flavours.
Then follow the directions to release all the best tastes out of the sausages then build this dish around the very tasty caramelized onions that spread the almost burnt sweet tastes into the the cooked batter make this cheap meal still a very popular and tasty easy cheap dish to make.
To make your batter.
Heat oven to 220C/fan 200C/gas 7.
Pour the flour into the large mixing bowl and stir in the mustard powder with a little pinch of salt.
Make a Hole in the centre of your mixture crack in the egg into the hole then dribble in the milk.
Stir constantly with a wooden spoon and gradually incorporating a little more flour, until you have a liquid batter in the bowl.
Now add a bit more milk and continue stirring until all the milk and flour has been mixed together to make into a smooth batter then gently mix in the cheese.
The smooth, batter lump-free batter that is the consistency of thick cream. then stir in the thyme and set aside.
Take a pair of scissors and snip the links between your sausages unless they have been already separated, then lay them into a roasting tin.
Add 1 tbsp of olive oil, stirring them until they are thoroughly coated with oil, then roast in the oven for 15 minutes during this time gently move the sausage to cook them evenly into a deep golden brown.
To Bake the batter for toad inthe hole.
Take the sausages roasting tin from the oven, remove the sausage onto a warm plate then quickly pour in the batter it should sizzle and bubble when the batter touches the hot oil.
Put your sausage back on top of the batter. return the roasting tin to the oven it back into the oven, then bake for about 40 mins checking occasionally to see the batter is just cooked through to a golden brown.
The batter will rise around the sausage and will be crisp and a golden color.
To test it insert a knife into the batter the knife should be clear with no sticky runny uncooked batter on it when you take it out.
To make this great caramelised onion gravy first.
Put the remaining olive oil in a large frying pan add in your onions and cook for about 10/15 minutes, stirring often, until some are dark brown but most are golden brown.
The srinkle over brown sugar cook it and stir slowly for a further 5 mins,so that the onions are coated completely. Pour over the stock, stirring constantly to make a smooth sauce, let it cook and bubble for 4-5 mins to thicken, then season to taste.
Cut the Toad in the Hole meal with a large slicer server into onto warmed plates spoon onto your plates plenty of the caramelised onion gravy and serve for 4 persons
