How to make this tasty easy Vegetarian Soup.
2 large onions finely chopped.
5 medium chopped carrots.
2 small turnips finely diced.
2 medium potatoes peeled and finely diced.
1 green pepper seeds removed and diced.
1 Litre (1 3/4 pints) vegetable stock made from stock cubes.
1/2 cup finely chopped green beans.
1 14oz can of tomatoes.
2 tbsp of tomato puree.
2 garlic cloves chopped fine.
Salt and pepper to taste.
1 tbsp corn flour.
2 tbsp olive oil.
Directions for Mixed Vegetarian Soup
Preheat the crockpot or slow cooker on high.
Heat the olive or in a large saucepan.
Add the vegetables and cook gently stirring slowly all the contents are softened but not browned.
Add the carrots, turnips, potatoes beans, peppers and garlic, cook for 2-6 minutes.
Add the stock liquid.
Blend in the flour with the tomatoes and mix in the tomato puree until it forms a consistent thicker liquid.
Add all the of the ingredients to the slow cooker put on the lid and cook on a low heat for 6-8 hours.
Serve hot garnished with a few fresh Basel or mint leaves, before serving for up to 6 persons with freshly baked bread rolls to complete this wonderful filling and warming hot soup.
